The Firefly Grill was recently featured in Bon Appetit magazine as one of the HOT 10 Best Eco-Friendly Restaurants. The Firefly Grill (Effingham, IL) Niall and Kristie Campbell's restaurant is fitted with recycled steel and reclaimed barn wood and sports an on-site garden. When you consider it's location (90 miles east of St. Louis) and it's competition (big cookie-cutter chains), this sophisticated American roadhouse is all the more impressive.
